Late for work?? Take cupcakes … Thats what I did.

It always seems that I am habitually late to work whenever I should be on time… such as for training.

Of course that is what happened to me this week. I apologized to being late to my trainers, they said I could make it up by baking some cupcakes.. Something I could easily oblige them ( I love to bake.)

I came home and searched the internet to figure out what cupcakes to make.

I found this receipe for Salted Caramel Cupcakes with salted caramel filling.

I took them to work and everyone loved them, stating it was almost better than my red velvet ones. I can be late as long as I bring in cupcakes..  That works for me.

Here’s are some pictures of the process.

Mini and regular sized ready to go into the oven.

The whole process – had to change my beater because the stand mixer I have totally sucks ( can’t wait to afford the kitchen aid mixer )

Filled with salted caramel filling.. Yum yum!!

Final Product – ready to take to work  ( although one was missing in the morning form this pile – gotta love family )

Love… Is it enough

Went to the beach today and wrote this word in the sand.

What is love? When do you know when it is real? What about the couples who have been in love for years but say the love died at some point and separate? Can you overcome obstacles in relationships with love alone or are other things necessary to weather these storms?

It’s been several years since I’ve been in a relationship and I did love my last ex.. But the love wasn’t enough to overcome the obstacles that we had .. I don’t often think and regret my decision to leave. I feel that it was the best decision to make in our situation.. But what if I was wrong.. What if that love was enough.. Will I get another chance with someone else now?

These are just questions that I have.. Time will tell if I get that chance to love again and I’ll find out then..

Dating: what it comes down to

Dating is a small word with so many different meanings. It’s certainly left up to interpretation. What is dating to you? While there are many interpretations to the concept of dating one thing I feel is key in any situation is identifying what both parties want out of the situation. There obviously won’t be growth if one person is content on mixing and mingling while the other seeks a more stable situation. It all comes down to communication. Being open and honest is the only way to be sure that neither party is settling or compromising. Once pertinent information has been exchanged both individuals should know where to proceed or withdraw from the situation. Just a few thoughts as i indulge in my oreo cheesecake from cheesecake factory.

Roadtrip Edition : Miami.2

After much debating, Stacey and I made it back to Miami the next weekend. Some called us crazy for back to back trips. (That’s what happens when you have a groupon voucher for a hotel room that you are locked in to … I had to get my monies worth out of it. )

So right after work Friday, we hit the road to Miami…  Tropical Storm Debbie was in town that weekend so the weather forecast for Saturday and Sunday in Miami was 70 – 80 % chance of rain.. That meant no beach this time.

We got to the hotel, (no rain!! ) checked in, got situated in the room and then decided to go check out Miami night life.. because of course its just beginning at 1 am….  Once we get to the hotel lobby and look out the door, what do we see… RAIN of course…. There was only a 80 % chance it would rain.……. What to do now???

-We people watched under the hotel awning outside.. That was fun!!

-Stacey bought an umbrella from a crack head for $2

-Walked with random guy from the hotel down to ocean drive and back.

– Saw this clock I wanted, (came back and found out it cost $600.. a girl can dream right)

-meet 3 young girls (21) from NY and people watched some more with them. (entertaining! )

– checked out the bar/club across the street. It had good music but a questionable crowd so we left.

Somehow still ended up going to sleep around 4 pm.  ( Miami Nights)

Woke up the next morning to some sunshine and only a 30 % chance on rain. That made it easy to just make it a relaxing day.. Brunch at one restaurant, drinks at another, back for a nap.

My lesson learned: the 2 for 1 drink specials on Ocean Ave are cheap liquor and will give you a hangover.. Topshelf liquor is the way to go.

For the evening we got dressed up,  went to dinner with a friend and tried hookah for the first time..  One must always remember, things happen for a reason. At the hookah spot we wanted a seat outside but the only available seating was inside.  After a while, we noticed the hostess hadn’t came to let us know that there were some spots now available outside.. We grumbled about this a little while continuing to hookah’d. Probably 5 minutes or so after Stacey mentioned this, all of a sudden you hear a down pour outside.. We were all smiles as we sat inside away from all the rain.. Sitting inside wasn’t a bad choice after all 🙂

The next morning, we said bye to our friends we met during our stay. A hotel guest from New York told us we needed to leave later in the afternoon to avoid traffic to which we responded, oh we do this all the time, there’s no traffic heading back home to Orlando. This guy must have known something we didn’t because sure enough, about 15 minutes into the drive home, we hit some traffic -___- Luckily it was from an accident so we were only in it for about 15 minutes and then we were back in the clear.

Thanks Miami for treating us well. We will see you again, because we have another living social deal to use.

Roadtrip Edition: Miami.1

What do you do when you’re young, single and free????

You take road trips!!!

Stacey & Liz

That’s what Stacey and I did this weekend. We purchased a living social adventure for empanada making and wine tasting in Miami and make the trek down south..

The day started off not the greatest.. rental issues and everyone just kept telling Stacey no.. (tip…. it pays to get your coffee at Starbucks.. they will exchange your drinks with no problem unlike Dunkin Donuts )

We got all the way to Boca Raton, with plans to eat @ Phillipe Chow, but they didn’t open until 5 :00, not at 3:30 when we were there.. Another no for Stacey..

We found a cute little shop to eat at.. they had a special bathroom.. Frogs sounds, bird sounds.. WAY to much going on.. but the food wasn’t bad. The non alcoholic drink we got was pretty good.  Looked and tasted amazing.

Summer drink

This is when the day started to improve for us. We continued the ride to Miami discussing life.. I won’t go into detail about how we lamented the fact that we are single, pushing 30 with no prospects -___- .. We did come to this conclusion tho:Hoes be winning...

After making it to Miami, we had time to spare.. We walked around Biscanye Blvd checking out the sites there.  American Airlines Arena, Bayside Park, and others.

The view was perfect. There was some sprinkles, but they didn’t last long so the day stayed beautiful.

Now it was time for the empanada making and wine tasting at Clos Bistro & Café.

clos bistro

Started of with glass 1 of wine – White Chardonnay.

We continued on to making the empanadas and tasted 3 other glasses of wine. It was good times.. We also had fun together.. One of the best parts of the adventure was seeing some great couples that gave us hope.

It was a good day!!!
